Kunafa plate with mozzarella cheese

Equipment

  • Saucepan with handle.
  • Ceramic baking pan.
  • Baking tray.
  • Silicone brush. 

Ingredients

  • 250 grams kunafa dough.
  • 200 grams butter (melted).
  • ¼ cup pistachios (chopped).

For filling:

  • 1 cup milk.

  • 1 cup cream.

  • 2 teaspoons cornstarch.

  • 1 teaspoon rose water.

  • ½ cup cottage cheese (grated).

  • ½ cup mozzarella cheese (grated).

  • 2 tablespoons sugar.

For sugar syrup

  • 1 cup water.
  • 1½ cups sugar.
  • 1 teaspoon lemon juice.
  • 1 teaspoon rose water.

Instructions

  1. Place the kunafa dough in a bowl. Break it into smaller pieces by hand.
  2. Pour melted butter over it and mix well with your hands.

Steps to make the kunafa filling:

  1. Take a separate mixing bowl and add milk, cream, sugar, and cornstarch. Mix them well.
  2. Turn on the stove, take a thick-bottomed pan, and heat the above mixture on low heat until it thickens. Continue stirring the mixture to prevent it from sticking to the pan.
  3. Add rose water and mix it in, turn off the heat after 2 minutes.
  4. Add mozzarella cheese and cottage cheese to the above mixture and mix well.

Steps to make sugar syrup:

  1. Take another saucepan, add water, sugar, and boil until the sugar is completely dissolved.
  2. Continue stirring and boil until the mixture thickens.
  3. When the mixture is ready, add lemon juice to it.

Steps to bake the kunafa:

  1. Take a baking pan, make the base with half of the kunafa dough mixture prepared above, pressing it down to flatten the dough.
  2. Pour the cheese mixture over the formed base and spread it evenly with a spoon.
  3. Take the remaining kunafa dough mixture and form another layer on top of the cheese layer.
  4. Brush the top layer with melted butter to ensure it sets properly.
  5. Preheat the oven, place the pan in the oven at 200 degrees for about 20 minutes or until it becomes golden and crispy on the surface.
  6. Pour the prepared sugar syrup evenly over the kunafa layer as soon as it comes out of the oven.
  7. Garnish it with pistachios before serving. Finally, cut it like pizza or cake and the kunafa is ready to serve..

Note:

The cheese in kunafa becomes leathery when it starts to cool down again. To prevent this, the cheese must be mixed with something else. One can mix another type of soft cheese like ricotta or cottage cheese. These soft cheeses are often mixed with kunafa to prevent it from becoming rubbery.
